Healthy Birayani

Ingredients: 1 cup 15 minute soked good quality rice,1 big bowl chopped veggies like potato,cauliflower,carrot,green peas,beans or you can put your favorite vegetables, chopped small bowl of dry fruits like almonds, raisin, cashews, 2 big chopped onion, 2 big chopped tomatoes, 2 chopped green chilies, 1 table spoon ginger & garlic paste,2 or 3 table spoon curd & milk,pinch of saffron,1 table spoon turmeric powder,1 table spoon garam masala powder,cumin seeds, 1 tea spoon asafetida,1 table spoon red chilli powder, 1 table spoon dry coriander powder, 1 small cinnamon stick,some whole black pepper & cloves, 2 green cardamom seeds, 2 table spoon oil,  2 cup water, salt to taste,pressure cooker, for garnish fresh coriander

Method: (1) first heat oil, then add asafetida & cumin seeds, cinnamon stick, black pepper& cloves,cardamom, when all gets splatter,put chopped green chilli, ginger & garlic paste.

(2) add onion and saute till it gets brown, then add tomatoes with all dry spices, cook it for 5 minutes.

(3) then saute veggies

(4) besides mix curd, milk and saffron

(5) add this mixture and dry fruits into the veggies

(6) add soked rice, water and salt  and mix all this well

(7) give 1 whistle and your healthy birayani  is ready

(8) garnish it with fresh coriander and serve it with some curd or raita
